Savory Dutch Baby

Not quite ready for yet another pizza night, I decided to try something a little differently with my favorite Lodge cast iron skillet. After some research, I went with a take on this Southern Living recipe.

Ingredients:

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup flour (I used my King Arthur’s whole wheat)
  • 1 tablespoon melted butter or oil
  • Cheese (3/4 cup, more or less to your preference – I used 1 cup +)
  • Bacon (I usually pre-make my bacon in batches)
  • Chives (or field garlic, which is what I had growing in my yard)
  • Whatever else you’d like to add
  • Oil or bacon grease.
  • Salt & Pepper

Instructions:

  1. Preheat your oven to 425°F.
  2. Combine eggs, milk & flour. Add a dash of salt & pepper (no need to measure, just put in how much you like). Stir or blend until very smooth (you want this to look like well blended crepe batter) – no lumps or bumps please!
  3. Heat your skillet on the stove top on medium high heat. Get it very nice and hot. Add some oil or bacon grease to coat. Really, you just don’t want your mix to stick to the pan, so however you’d like to accomplish that, go ahead. Make sure to spread up the insides of the pan too – this Dutch Baby is going to rise up the sides!
  4. Pour your batter into the pan. Cook one minute or until you see the bottom curling up a little. Transfer immediately to the oven. Cook until puffed and the tops brown nicely. Mine puffed a little uneven, but that’s totally fine!
  5. Sprinkle with cheese and put back in the oven until the cheese is melty. I let it go a little longer to get some browning on the cheese, but you know how cooked you like your cheese – some people even like it a little burnt. That’s fine, so long as you eat it.
  6. Remove from the oven and top with bacon & chives (plus whatever else you’d like).
  7. Share with another person – mine was made in a 10 inch skillet and fed just my husband and myself as a main dish. If serving as an app, maybe share between 4!

Notes:

You can totally make this however you want, just watch the ratios of egg to milk and flour! Make it big, small, sweet, or savory. I have heard that adding cinnamon into the batter, then putting sugar and fruit on the top is divine! I might need to try that next!
