Quarantine Meal: So Many Potatoes!

Literally, the easiest thing I made all week
If you can make mashed potatoes, you can make this Polish inspired dish!
I bought a 10 lb bag of potatoes in early March, and we have yet to get through half of the bag. Potatoes are a great source of minerals, and a great staple to keep you going when fresh vegetables run low.
Basically, this recipe is exactly what you see. I might make mashed potatoes differently than you do though, so I’ll write everything below.
Ingredients:
- Russet Potatoes
- Milk
- Butter
- Salt
- Pepper
- Sauerkraut
- Polish Kielbasa
- Field Garlic or Chives
Instructions:
- Dice potatoes – Try to get them into similar sizes, they don’t need to be pretty at all.
- Boil potatoes in a large pot of salted water until they are soft.
- Once you can poke with a fork and there is no resistance, drain the water off the potatoes and start to mash.
- Add butter a little at a time until the potatoes become somewhat coated. It should start looking a little like mashed potatoes, but not creamy or smooth.
- Now add in your milk until the texture is smooth!
- Stir in salt & pepper. Your mashed potatoes are finished!
- Chop & cook kielbasa on medium heat in a frying pan.
- Pour sauerkraut on top of the kielbasa and heat thoroughly.
- Serve sauerkraut & kielbasa over mashed potatoes. Garnish with field garlic/chives.
Warning! This meal is super heavy, so make sure you’re either super hungry or eat lightly. It’s also not the most healthy, but it is warm & comforting on a hard working chilly night! If you make the potatoes ahead of time, this only takes 5 minutes to fix!
