Quarantine Meal: So Many Potatoes!

Mashed Potatoes, Kielbasa, Sauerkraut
Mashed Potatoes, Kielbasa, Sauerkraut with Field Garlic

Literally, the easiest thing I made all week

If you can make mashed potatoes, you can make this Polish inspired dish!

I bought a 10 lb bag of potatoes in early March, and we have yet to get through half of the bag. Potatoes are a great source of minerals, and a great staple to keep you going when fresh vegetables run low.

Basically, this recipe is exactly what you see. I might make mashed potatoes differently than you do though, so I’ll write everything below.

Ingredients:

  • Russet Potatoes
  • Milk
  • Butter
  • Salt
  • Pepper
  • Sauerkraut
  • Polish Kielbasa
  • Field Garlic or Chives

Instructions:

  1. Dice potatoes – Try to get them into similar sizes, they don’t need to be pretty at all.
  2. Boil potatoes in a large pot of salted water until they are soft.
  3. Once you can poke with a fork and there is no resistance, drain the water off the potatoes and start to mash.
  4. Add butter a little at a time until the potatoes become somewhat coated. It should start looking a little like mashed potatoes, but not creamy or smooth.
  5. Now add in your milk until the texture is smooth!
  6. Stir in salt & pepper. Your mashed potatoes are finished!
  7. Chop & cook kielbasa on medium heat in a frying pan.
  8. Pour sauerkraut on top of the kielbasa and heat thoroughly.
  9. Serve sauerkraut & kielbasa over mashed potatoes. Garnish with field garlic/chives.

Warning! This meal is super heavy, so make sure you’re either super hungry or eat lightly. It’s also not the most healthy, but it is warm & comforting on a hard working chilly night! If you make the potatoes ahead of time, this only takes 5 minutes to fix!
